Three Ways to Use Pistachio Protein Powder

A single-ingredient powder invites simple cooking. Because Staccio is nothing but pistachio, cold-pressed and milled fine, it carries no flavouring to work around and no sweetness you did not choose. It takes on the character of what you make with it, and lends that dish a soft green colour and a nutty depth.

Here are three of our favourite ways to use it: one to begin the day, one to bake, and one to blend.

1. The pistachio latte

A quiet morning ritual. Warm, nutty and gently sweet, with or without coffee.

Ingredients (serves 1)

  • 1 scoop (30 g) Staccio Pistachio Protein Powder
  • 250 ml milk of your choice
  • 1 shot espresso (optional)
  • 1 tsp honey or maple syrup, to taste
  • A pinch of sea salt

Method

  1. Warm the milk in a small pan over medium-low heat until steaming. Do not let it boil.
  2. Place the powder, sweetener and salt in a mug. Add a splash of the warm milk and whisk to a smooth paste.
  3. Pour in the remaining milk, whisking or frothing until silky. A handheld frother or a few seconds in a blender works beautifully.
  4. Top with espresso if you like, and serve at once.

For an iced version, whisk the paste with a little warm milk, then add cold milk and pour over ice.

2. Pistachio protein cookies

Soft in the centre, golden at the edges, and green within. Pistachio powder replaces part of the flour, adding flavour and protein in one step.

Ingredients (makes about 12)

  • 115 g unsalted butter, softened
  • 100 g light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 90 g plain flour
  • 60 g (2 scoops) Staccio Pistachio Protein Powder
  • 1/2 tsp baking soda
  • 1/4 tsp fine salt
  • 80 g white or dark chocolate, chopped
  • A handful of chopped pistachios, to finish (optional)

Method

  1. Heat the oven to 180°C (350°F) and line a baking tray with parchment.
  2. Beat the butter and sugar together until pale and creamy. Add the egg and vanilla and beat until combined.
  3. In a separate bowl, whisk the flour, pistachio powder, baking soda and salt.
  4. Fold the dry ingredients into the butter mixture until just combined, then fold in the chocolate.
  5. Roll into twelve balls and place on the tray, leaving space between them. Press a few chopped pistachios on top, if using.
  6. Bake for 10 to 12 minutes, until the edges are set and the centres still look slightly soft.
  7. Cool on the tray for five minutes before moving to a rack.

Because pistachio powder contains no gluten, the dough is a little more delicate than a classic cookie dough. Chilling it for 30 minutes makes it easier to shape.

3. The pistachio smoothie

Bright, creamy and ready in a minute. Banana brings the sweetness; pistachio brings the depth.

Ingredients (serves 1)

  • 1 scoop (30 g) Staccio Pistachio Protein Powder
  • 1 ripe banana, frozen in pieces
  • 250 ml milk of your choice
  • 2 tbsp plain or Greek yoghurt
  • A small handful of spinach (optional, for colour)
  • A few ice cubes
  • A drizzle of honey, to taste

Method

  1. Add the milk to the blender first, followed by the powder, then the remaining ingredients.
  2. Blend on high for 45 to 60 seconds, until completely smooth.
  3. Taste and adjust: more honey for sweetness, more milk for a thinner smoothie, more ice for a colder one.
  4. Pour into a chilled glass and serve.

For a richer version, add a spoonful of pistachio butter or a few dates. For something closer to dessert, a few drops of almond extract and a pinch of cardamom are lovely.

A few notes on cooking with pistachio powder

  • Whisk well. With no gums or emulsifiers, the powder blends best with a whisk, frother or blender. Start with a paste, then add liquid.
  • Sweeten to taste. Staccio contains no sweeteners, so you are free to keep things as subtle or as indulgent as you wish.
  • Bake in proportion. In most cookies, pancakes and quick breads, you can replace roughly a quarter to a third of the flour with pistachio powder.
  • Keep it sealed. Store the pouch closed, cool and away from light between uses.

Each 30 g scoop offers 14 g of protein, 5 g of fibre and 110 calories, so a latte or smoothie becomes a more sustaining part of your morning without becoming complicated.
