What Is Defatted Pistachio Powder?

There are ingredients that announce themselves, and there are ingredients that simply are what they are. Defatted pistachio powder belongs to the second kind. It is pistachio, and nothing else, taken through two patient steps: pressing and milling. What remains is a soft, pale-green powder with the flavour of the nut and a fraction of its oil.

This short guide explains what defatted pistachio powder is, how it differs from ordinary ground pistachio, and how we think about it at Staccio.

A single ingredient

Most protein powders are built. They begin with an isolate or concentrate, then gather sweeteners, gums, flavourings and fillers until they taste the way a label says they should. Defatted pistachio powder begins and ends with one ingredient. At Staccio, the ingredient list reads, in its entirety: pistachio.

We find this clarifying. When there is only one thing in the pouch, the quality of that one thing is everything. There is nowhere for a lesser ingredient to hide, and nothing added to disguise one.

What "defatted" means

Pistachios are naturally rich in oil. That oil is part of their charm when eaten whole, but it also makes them difficult to turn into a fine, stable powder; grind them long enough and you arrive at pistachio butter, not flour.

Defatting removes most of that oil. Our pistachios are cold-pressed, a slow mechanical process that presses oil from the nut without solvents and without high heat. The pressed nut that remains is drier and denser, and its protein and fibre are concentrated by the absence of the oil that has been taken away.

It is worth being precise: defatted does not mean fat-free. Some of the natural oil remains, which is part of why the powder still tastes unmistakably of pistachio rather than of something merely green.

Milled fine

After pressing, the pistachio is milled into a fine powder. The texture matters. A fine mill disperses more easily in milk, folds more smoothly into batters, and sits more gracefully in a cup. A coarse grind tends to settle and feel gritty; a fine one behaves more like flour.

The result is a powder you can whisk, blend, bake or simply stir. It is not designed to vanish; it is designed to belong.

Why pistachio protein powder

People come to pistachio protein powder for different reasons. Some are looking for a plant protein with a short ingredient list. Some want to avoid the sweeteners and flavourings common in many conventional powders. Many simply love pistachio and want more of it in their day.

Per 30 g scoop, Staccio offers 14 g of protein, 5 g of fibre and 110 calories. Those numbers are a result of the process rather than an addition to it: remove most of the oil, and what is left is naturally higher in protein and fibre by weight.

The flavour is gentle and nutty, with a faint sweetness of its own. It does not taste of vanilla, or of chocolate, or of a laboratory's idea of either. It tastes of pistachio.

How it differs from ground pistachio

Ground pistachio, the kind used in pastry, is simply the whole nut reduced to crumbs. It is lovely, but it is oily, it clumps, and it carries considerably more of the nut's calories from fat. It is an ingredient for richness.

Defatted pistachio powder is an ingredient for structure and protein. It is lighter in the hand, finer in texture, and more versatile in liquid. You can use the two together; many of our favourite bakes do. But they are not the same thing, and they are not interchangeable one for one.

Nothing added

We make Staccio without solvents, sweeteners or fillers. There is no flavouring because the pistachio is the flavour. There is no sweetener because we would rather you decide how sweet your morning should be. There is no filler because a pouch of pistachio should be a pouch of pistachio.

Staccio is Made in Italy, where the pressing and milling are carried out with the care we believe a single-ingredient product deserves.

How to use it

Defatted pistachio powder is at home almost anywhere a spoonful of nut flour or protein powder would be:

  • Whisked into warm milk for a pistachio latte.
  • Blended into a morning smoothie.
  • Stirred through yoghurt or overnight oats.
  • Folded into cookie dough, pancakes or cake batter in place of a portion of flour.
  • Sprinkled over fruit, ice cream or a bowl of ricotta and honey.

Start with a single 30 g scoop and adjust to taste. Because it contains no gums or emulsifiers, it rewards a good whisk or a few seconds in a blender.

Storing your powder

Keep the pouch sealed, cool and away from direct light. Like any nut product, the remaining natural oils prefer to be left undisturbed. A well-sealed pouch in the pantry is all it asks.

Shop the powder

Staccio Pistachio Protein Powder is a single ingredient, cold-pressed and milled fine, in a 200 g pouch. Shop the powder and bring a little pistachio to every day.
